Nate's Favourite 3-Ingredient Zucchini Fritters

These beautiful bites are one of Nate's favourite foods! He calls them, "Eggie fritters" and I've been adding them into our meal prep rotation since he was old enough to have solids! Not only do they make a great soft food for little fingers, but they're also loaded with veggies! Be sure to share this one with your baby-led weaning mamas, because they're SUPER quick to throw together and they can really be made with whatever you've got in the fridge!

But in all honesty - Whether you're a kid or not I think you'll enjoy these!

You will need:

1 zucchini, grated
1 egg
1/4 cup almond flour
A nut milk bag, fine mesh strainer or cheesecloth
 

Use either a nut milk bag, a strainer or some cheesecloth to squeeze out as much of the liquid from your grated zucchini as possible. Place the zucchini in a bowl with the remaining ingredients and stir. 

You can either roast or cook these in a pan, so do what works best for you!

Option 1: Roast

If you decide to roast them, simply form the mixture into flat patties and roast in a pre-heated over at 375F until browned and crisp on the bottom, flipping half-way through. You'll want to use a silicone or parchment-lined baking sheet if you go this route so they are easy to flip.

Option 2: Fry

I personally like to fry them in a pan with a bit of avocado oil (a great choice of oil for use with high heat cooking). Simply form your patties and then add a few to the pan. Let them cook WITHOUT flipping until the bottom is browned well! If you flip them too soon, they may fall apart because the ratio of veggies to egg (your binding agent) is quite high.

A few other thoughts

- Your fritters should keep well in the fridge for 4-5 days, although they never seem to last that long in our house! :)

- Allow this recipe to serve as a base for your CREATIVITY! Try adding in whatever you've got on hand: Leftover quinoa, grated carrot, some sweet potato, and so on. Have fun with it and be sure to tag me over on Instagram so I can see what sort of creations you come up with!

- And finally, feel free to top your fritters with a dollop of coconut yogurt, guacamole or sour cream and some fresh green onions for that extra little somethin'-somethin'. Enjoy!
